 A sweet white from Coteaux du Layon, made from "old vines", from the Chenin Blanc grape. The 2007 vintage was very good and shows the quality of the sweet wines from Layon. This wine is sweet with 115g / L residual sugar.

Vineyard: Grown on schist-clay and schist-sandstone soil near the town of Beaulieu sur Layon. Patient waiting for the overripe grapes, until the final stages of noble rot, manually harvested by successive picking - selection of grapes on the 3rd and 4th passages in preselected plots. Respectful harvesting, with removal of damaged cobs, gentle pneumatic pressing.
 
Winemaking: Slow natural fermentation for several weeks without the addition of yeast. Fermentation is stopped once a perfect balance in taste has been achieved, thanks to regular tasting. Raised in tanks with careful oxygenation and resuspension of lees to garnish the structure and develop complex aromas during 10 months.
 
Nose: Pleasant and generous, offering all the characteristics of the Chenin grape variety: quince, pineapple singed with rum and acacia honey.
 
Taste: Rich and sweet attack, honey aromas dominate and then citrus fruit notes come to give a good balance. To be enjoyed within 10 years. 
 
Colour: rich, dark yellow, with copper tints.

This wine is to be served cool, ideally at around 8 C. The wine is ideal on its own or can be paired with the following: Salad of "gésiers" (gut) and "magrets" (breast) of Duck. This is a great French filling salad which is a good match with this wine, served for guests or simply for lunch. Cheese such as Roquefort or the classic "Fourme d'Ambert" match well. For dessert the vineyard recommend pear/apricot pies, desserts with almonds, or fruits such as fresh guava or mango. The great qualities of this wine can be seen from its ability to also complement spicy dishes such as Asian curries.
