The Savennières AOC is widely recognised as one of the very best dry white wine regions, made from Chenin Blanc, particularly suited for many years of aging. This wine was chosen by the French Wine Review Magazine as one of the "5 finds of 2008" of the Loire Valley. It was described as "straight mineral with strawberry notes, proof of that ripe Chenin wines with less than 14 degrees exist in Savennières".
 
The vineyards are managed through sustainable agriculture, where the wines are estate grown and bottled. The soil has a mixture of sand and schist.
 
Winemaking: Aromatic and velvety structure througn overmature Chenin grape. Hand harvesting in two or three sortings in a week. Systematic tasting of the grapes and then pressing followed by a long fine double racking at temperatures controlled from 12 to 15. Alcoholic fermentation in vats, after addition of yeast and close monitoring of temperatures between 17 and 19 degrees. Fastediously raised in French oak barrels for 9 months with r esuspension of the lees and careguloxydation, until bottling in September after the harvest.
 
Nose: main aromas of dry fruits (almonds, nuts, apricots) and smooth spicy notes from the aging in French oak barrels. You also could find characteristics of Chenin with notes of blond tobacco.
 
Taste: first quite round, the wine quickly reveals a nice mineral acidity.
 
Colour: intense, nice nuances of gold and tan colours.

Serve cool (10-12 C), this dry white wine will be nicely associated with: shellfish (langoustines, lobsters, ...), noble shellfish (scallops), fish to flesh closely in creamy sauces (turbot, sole, sandre, ...), certain white meats in sauce (white poultry with fresh cream, ...)

Within the Loire Valley, Savennières is a small appellation because of the number of hectares but it is a big one regarding the wines it produces. Clos des Perrières is a vineyard of 1,80 hectares in the centre of the little town Savennières, that is UNESCO heritage. Its location and the diversity of its soils (sand, schist, granite) offer to the Clos des Perrières an exceptional potential, we like to call it our “garden”.
