Grown on clay, gravel and schist, with south west facing 5 and 6 year old vines. The grapes are handpicked, then pressed and slowly fermented in barrels. Aged in oak for 12 months.
Residual sugar: 2.9g / L. Acidity 2.8 g/L
Certified as Organic.
Serve cool, but note do not serve too cold for full enjoyment. Open a little in advance of drinking. Serve with white meat, fine poultry, fish or cheese.
